I wish I could tell you that I strategically selected this recipe because it would work out that there would be a serving to accompany each serving of drumsticks. But that'd be a lie. I picked this because it's sweet potato cottage fries for pete's sake. And it'd be a good way to use the fresh thyme I had left from last week that, miraculously, hadn't turned to mush.
Sweet Potato Cottage Fries
1 1/2 tbsp olive oil
2 lb. sweet potatoes, peeled, cubed (1/2 inch)
2 large garlic cloves, minced
1 tsp finely chopped fresh thyme
1/2 tsp coarse salt
1/4 tsp pepper
2 tbsp chopped fresh Italian parsley
Heat butter and oil in large skillet over medium heat until butter is melted and oil is hot.
Add sweet potatoes; toss to coat with oil.
2 lb. sweet potatoes, peeled, cubed (1/2 inch)

Eat these potatoes with the Balsamic-Maple Glazed Drumsticks. They went well together.
The potatoes didn't smell very appetizing, at least not until the seasonings were stirred in -- what an amazing difference some simple things make! The exterior of each cube was just crispy while the interior soft, just as they should be. The seasonings were just enough to accentuate the potato; the natural potato sweetness really shines. These cottage fries are a definite keeper.
