Roast Beef and Cheddar on Focaccia
It's so freakin' hot and humid it's insane. Yesterday I went to the bedroom to lay down (the coolest of my four rooms) and enjoy the gentle breeze of the ceiling fan and wound up passing out until 6 a.m. A good, oh say, about 14 hours. It's hot.
Googling things like "too hot to cook" I got a bunch of the same dissatisfying answers: grill! make salad! grill! Ugh. So sandwiches it is.
Roast beef slices folded to fit neatly on a quarter of focaccia.
Romaine, smeared with mustard, placed on the beef.
Spinach on the mustard-smeared romaine, topped with tomato slices, onion slices, chopped Kalamata olives, salt and pepper.
Then a couple of slices of cheese to weigh the more slippery toppings down.
This might be the best roast beef sandwich I've ever made.

It's good enough that I did almost exactly the for lunch.
It went well with chips.
