A cross between the "upper-end" taco salad and our usual ghetto taco salad. We forgot to get taco sauce.
When I realized we didn't have taco sauce, I decided to mix it up a bit and do a hybrid taco salad. This is how I did it:

Brown the 1-1.5 lb of beef with about a cup of diced onions and about 1.5 tbsp minced garlic.
Drain off fat in a small collander and add about 3/4 c water with about 1/3 c taco spice from the McCormick bottle (equivalent to one envelope of taco seasoning) and mix well.
Stir in beef and about 1 cup of frozen corn.
Cook water off.
Crumble some tortilla chips in a bowl, layer in some lettuces, top with the taco meat mix, black beans, tomatoes, cheese, black olives, salsa (or Catalina) etc.
Simple, required only what we had on-hand etc. Definite winner. Hopefully it won't do Rodney in.
