Since I've been eating so much soup lately, my friend outside Chicago suggested I have some corn bread with it. Duh! What a genius idea!
I started in on making some Albers Corn Bread, but didn't have enough flour. And while I had enough flour to make Albers Sweet Corn Muffins, I didn't have enough Albers Yellow Corn Meal. I put it off a day and bought some more Albers Yellow Corn Meal.
This is the ingredient statement:
It tells me the corn meal is loaded with B vitamins (1, 2, 3, and 9) as well as iron! That's all good!
And note the tip to retain freshness. Not to bag on Albers at all, but shouldn't they package their meal in a zip locking container-bag? It comes in a cardboard box without any sort of a storage liner. But then, maybe Albers assumes you eat enough of this nutrient-rich food that you don't need long-term storage.
