
North Shore offers tarragon as a living herb complete with that little wad of roots hidden behind the clamshell label.

The next two recipes I'm going to try call for lots of tarragon so none of these sprigs are going to waste. I cut all of them from the root ball.

The sprigs were swished in some water to get rid of any stray dirt.

Spreading them over a sheet of paper towel, I rolled them up to wick up the moisture.

Pulling the leaves from some of the sprigs, I had quite a pile of leaves.

Chopping them releases their very faint fennel aroma.
