Flats of strawberries bring me back to my younger days, when I first started slinging in a kitchen.
During the dog days of summer, that restaurant cranked out tons of homemade strawberry shortcakes. Scads of them, and that meant insane amounts of strawberry prep.

This isn't a pro kitchen, it's not even a kitchen serving two, so I went with half a flat. Grower's Direct has the boxes sawed in half in advance.

After hulling three of the six pints of berries and slicing off the mushy parts in preparation of rinsing, I saw that maybe I shouldn't have purchased quite so many.
