

I got it, I got me some coppa! If you'll remember, I'd hunted all over the city for coppa once and didn't find it until the store that had it was closing.
This time I made a bee-line straight for Claro's over in Tustin.
Not only did I get me some mild coppa (you can get it hot), I also picked up pancetta while there.

Coppa is certainly dry and dense. You need a sharp knife to easily cut it into a dice. I need to get my knives sharpened.
