
After I brought these tilapia fillets home, I saw they are from China.

Seriously. I just saw on Dirty Jobs not that long ago an episode about striped bass and tilapia farming right here in the desert of California by a place called Kent SeaTech. Why in the bleepity bleep are we importing them from China? And why the hell am I not reading every single label in the store?
Anyway, I'm not going to let them go to waste. The fillets were dried on paper towel before they were halved lengthwise.
