When I made Short Ribs with Tomato and Fennel last year I observed that the beef I used didn't turn out as tender as I'd expected. Before that, when I made jambalaya a couple years ago, I said that I'd use Costco short ribs next time.
While I'm not going to repeat either of those dishes, this is the beef I had in mind both times. Look at how nicely marbled they are.
