Roasted Potatoes and Green Beans



I needed something to eat with those Spiced Panko-Crusted Chops, so I flipped through the Cooking Club magazine hoping to find something suitable. Hmm. Potatoes and green beans? With hoisin and five-spiced flavored chops? Not a perfect match, but I'm a sucker for potatoes.

The recipe attempts to get you to make a presentation of this dish but I cut to the chase, mixing the garlic with green beans and potatoes and completely omitting the sprinkle of fresh parsley.

Roasted Potatoes and Green Beans

3 tbsp olive oil, divided
2 large russet potatoes (about 1 1/2 lb.), unpeeled, cut crosswise into 1/2-inch-thick slices
3/4 tsp coarse salt, divided
1/8 tsp pepper
12 oz. green beans
5 medium garlic cloves, unpeeled

Heat oven to 425°F.

Spread 2 tablespoons of the oil in large rimmed baking sheet. Arrange potatoes on baking sheet in single layer; turn to coat both sides with oil. Sprinkle with 1/2 teaspoon of the salt and pepper.


Bake 22 to 25 minutes or until golden brown on bottom. Turn; move to one side of pan. Add green beans and garlic to empty side of pan; sprinkle with remaining 1/4 teaspoon salt.

Bake 15 minutes or until potatoes are browned and beans are tender and light golden brown.


Squeeze garlic from skins onto cutting board; mash with side of knife until smooth. Combine mashed garlic with remaining 1 tablespoon of oil.

Toss the garlic and oil mixture with the beans and potatoes.


It was straightforward and easy. Best of all the beans and potatoes were freakin' fantastic! This might be my new go-to for side dishes. The roast garlic was like succulent butter, smooth and creamy. The garlic quantity was just enough that you didn't actually need butter and not so much that it was goopy.

This stuff was so good that after dinner, when I put my dinner dishes in the sink, I wound up eating the remaining beans and potatoes. Every single one. And used the last potato to wipe the bowl clean of garlic. Then I licked my fingers.

Definitely worthy of repeating exactly as prepared tonight! I might go ahead and make another batch for a snack later. They are that good. Try them. Try them now.

Total: $2.23 or $0.56 for each of four servings.
