Many websites talk about how to make an easy/quick future dinner by making two entire lasagnas one night and freezing the second lasagna in its entirety for a fast dinner later. What those sites don't acknowledge is that single people (or even small families) like lasagna too and a single lasagna can be frozen in individual portions for a fast dinner or lunch for one or three after the original dinner.
After all, what would we singles do with an entire lasagna on day 1 and another entire lasagna for a later day? We'd be eating a lot of lasagna consecutively. And harbor a serious resentment toward lasagna and the jerk who said it was best done this way. I say we make one lasagna for dinner, save a piece for lunch or dinner the next day and freeze the rest.
This is how I accomplish this task.
Here's the remaining Sausage, Cheese and Basil Lasagna, Take 2. It sat in the fridge overnight and is chilled completely. I removed a slice for lunch (eaten earlier). So there is essentially eight servings left. And yes, my slices for dinner and lunch so far were on the large side. Shoot me.
After sectioning the pan of lasagna into eight, fairly equal portions, I started wrapping each portion in foil.
Tear off a square of foil and place a slice of lasagna in the center. Fold the lasagna in foil width-wise and then tuck the ends underneath the lasagna.
Repeat until each piece of lasagna is wrapped in foil. Then place the foil-wrapped lasagna slabs in one or two gallon-sized freezer Ziplocs. Stow the bags into the freezer.
That's it, that's all you have to do. In the future when you need a quick lunch or dinner, let a portion thaw overnight, remove it from the foil and reheat in the oven or microwave. Or, you can reheat it in it's foil wrapper in the oven. I suppose it's even possible to remove (or not) a slice from foil and reheat in the oven while frozen.
This is one of the limitless reasons I love lasagna. It tastes good, freezes well and reheats in multiple easy ways. Try it and you'll wonder why you never tried it before.
