Chocolate-Banana Bread



I selected this recipe to mix it up for Rodney a little and to do something with the surplus of over-ripe bananas in the freezer. The recipe is in a copy of my Cooking Pleasures magazine, but when looking for the link on the Cooking Club site, couldn't get it. I found the same recipe on Tyler Florences blog at the link below.

The only thing I changed from the original was to add nuts per Rodney's request.

Chocolate-Banana Bread
adapted from Tyler's Ultimate by Tyler Florence

2 c all-purpose flour
3/4 c sugar
1/4 c unsweetened cocoa
1 1/2 tsp baking powder
3/4 tsp salt
1/2 c unsalted butter, softened
4 oz bittersweet chocolate bar
2 eggs
1 1/3 c mashed very ripe bananas (about 3 bananas)
1 tsp vanilla extract
1/2 c nuts, chopped (optional)
powdered sugar (optional)

Heat oven to 350°F. Butter a 9x5" loaf pan.


Whisk flour, sugar, cocoa, baking powder and salt in large bowl.


Beat butter in large bowl at medium speed until lightened.


Melt the chocolate by breaking the bar into pieces.


Microwave the chocolate for 30 seconds on high power (default power setting). Stir chocolate until smooth.


Beat in chocolate, eggs, bananas and vanilla at low speed.


Stir in flour mixture just until combined.


Add nuts if you choose and stir only until just combined.


Bake 50-60 minutes or until toothpick comes out almost clean. Cool at least 15 minutes on wire rack before unmolding.

Sprinkle with powdered sugar before serving.


The batter looked so good when I was preparing it and the density reminded me of brownies. The loaf smelled great as it baked!

When Rodney tried it, he said it was sort of weird since it was like a brownie with a funny taste or it was like banana bread but with something weird going on. I tried a slice and agreed. It was weird. The banana flavor wasn't highlighted but masked by chocolate but yet the chocolate didn't stand out. Huh. If I do chocolate banana bread again, I'll try a different recipe.
