
Mashed potatoes with cabbage and onions.
While the ribs were reheating in the oven, I thought I'd try this recipe found on Tastespotting. It is St. Patty's Day and I had purchased cabbage (on a crazy sale) without knowing what I'd do with it. Click the link below to check out the original recipe at The Taste Traveller.
3-4 medium red potatoes, washed
2 tbsp butter, divided
1/4 c milk
Cube potatoes. Place in a saucepan and cover potatoes with water. Bring to a boil, cover and simmer for 15 minutes or until fork-tender.
Meanwhile, saute onions in a 2 tsp of butter.

Transfer potatoes to colander with slotted spoon; retain cooking water.

Bring the water to boil; add cabbage and cook until soft, about 5 minutes.

Place potatoes in a large bowl. Add remaining butter and mash.

Add salt, onions and cabbage.

Stir until combined.

These potatoes weren't difficult to prepare and both cabbage and onion were subtle flavors. Like The Taste Traveller says in her post, this really is a springboard for other things. I can imagine scallions and not-quite-soft cabbage would be excellent, offering some texture.
FYI, it went perfectly with the ribs!
