Garlic Chicken-Fried Chicken

Golden Garlic Chicken-Fried Chicken, waiting for some mashed potatoes and Roasted Broccoli to join us for dinner.

I found this chicken on allrecipes.com. I don't think I've ever known what chicken-fried steak was and certainly didn't know anything about chicken-fried chicken, but since it looked like easy-to-fry fried chicken, rolled with it, especially since it has garlic in the title.

2 tsp garlic powder, or to taste
1 tsp ground black pepper
1 tsp salt
1 tsp paprika
1/2 c seasoned bread crumbs
1 c all-purpose flour
1/2 c milk
1 egg
4 skinless, boneless chicken breast halves - pounded thin
1 c oil for frying, or as needed

In a shallow dish, mix together the garlic powder, pepper, salt, paprika, bread crumbs and flour.

In a separate dish, whisk together the milk and egg.

Heat the oil to 350°F (175°C).

Pound chicken flat if you haven't already.

Dip the chicken into the egg and milk, then dredge in the dry ingredients until evenly coated.

Fry chicken in the hot oil for about 5 minutes per side, or until the chicken is cooked through and juices run clear.

Remove from the oil with a slotted spatula, drain and serve.

This chicken is good!  I liked the fried chicken aspect.  A lot.  Rodney and I both liked it and neither of us thought it too garlic-y or too salty. Actually, I think it could stand more garlic. And maybe next time I'll throw in some sort of hot, like extra paprika or some chipotle.  I can see us having this again, for sure. What I really liked about this recipe is that it doesn't call for anything we'd have to go out of the way to get (except maybe the milk) and is pretty quick to make from prep to plate.

Cost:
  • chicken: let's say it's $4.20
  • spices and all that other stuff: $12

Total: $6.20 which makes each serving $1.55 if you get four and $2.07 if you get three.

We had our fried chicken with mashed potatoes and Roasted Broccoli with Lemon.

This is interesting. I'm going to use the flour coating on my fish cheeks today. Thanks.

On fish cheeks? My favorite part of a fish and I'd never thought to see if I could buy them outright! I'm dying to know how they turn out!
