
As usual, preparing for an Aidells recipe means I try different ingredients, even cheese.

Ingredients: pasteurized milk, cheese cultures, salt, and enzymes.
I don't know if I've ever had Fontina, even in a sandwich purchased from a deli/sandwich shop.

I like that the red waxy rind is clearly inedible.

It left little bulbs all over the cheese edges that I found mesmerizing.

Soft like mozzarella, it was easy to slice the Fontina wedge into 1/2-thick slices. Stuffed in a meat loaf I bet it's going to be killer!
