My first time using chutney, I was surprised how similar it is to jam. This mango chutney consists of sugar, mango, vinegar, salt, chili, ginger, and garlic.
The stuff even looks like jam. That little pamphlet that was strung around the jar neck has recipes in it. I might try one or two in the future.
Looking up chutney in my 1984 copy of Larousse Gastronomique, I learned a couple things. Here are excerpts:
A sweet-and-sour condiment, made of fruits or vegetables (or a mixture of the two) cooked in vinegar with sugar and spices until it has the consistency of jam. Considered as typically Indian, chutney - from the Hindustani chatni (strong spices) - is in fact a British speciality dating from the colonial era (like pickles).
They enliven slightly insipid dishes, mainly cold ones (chicken, fish, ham, leftovers).
And then there are recipes for apple and mango chutney, pineapple chutney, and Spanish-onion chutney! I need to remember this in the future!
