Golden Roasted New Potatoes



There's no way I could pass this up without trying it. After all, it's a new way to try my favorite vegetable and it looks like it'll be simple and scrumptious. I think it'll go well with the next chicken recipe too.

Golden Roasted New Potatoes

1.75-2 lb. small red new potatoes, unpeeled, cubed (1/2 inch) (generous 5 cups)
2 tbsp extra-virgin olive oil
1/4 c grated Parmesan cheese
2 tsp smoked paprika
1/2 tsp kosher salt

Place large rimmed baking sheet in oven. Heat oven to 400°F.; heat baking sheet 10 to 15 minutes or until very hot.

Meanwhile, combine all ingredients in large bowl, stirring to coat potatoes.
 
 

Carefully remove hot baking sheet from oven; spread potatoes on pan.

You should hear the sizzle!

Bake 35 to 45 minutes or until golden brown, stirring once or twice during cooking.
 


These little potato bites are great! They are seasoned so nicely and just crispy on the edges yet tender in the middles. I really like how they looked -- beautiful!

When making these, the coating made me think of Bada Bing Bada Banged Potatoes, but of course the flavors are quite different. These are much more subtle in flavor but just as memorable.

  • Parmesan cheese: $0.67
TOTAL: $3.46 or $0.58 for each of six servings.
