C&H Confectioners Powdered Pure Cane Sugar



Planning on making drizzle for some muffins, I'm gonna need some powdered, or confectioners, sugar. Of course, I could simply grind up some granulated sugar in my mortar and pestle, but that might take a century.

Instead I looked for it in the baking aisle of Smart & Final and bought the smallest bag there.

Apparently, four pound of sugar is just 60 servings.


Oh, and there's a little cornstarch for anti-caking purposes.

Looking sugar up in the ol' Larousse Gastronomique, I was astounded to find more than FIVE PAGES of information. Wow!  This book amazes me. Here's what it says specifically about icing (confectioners') sugar:
granulated sugar milled very finely into a powder, mixed with 3% starch in France (calcium phosphate in Britain, cornflour (cornstarch) in the United States) to prevent it caking. It is used for dusting, decorating, or icing cakes and buns and is included in many kinds of confectionery.
